Sweetened only with the natural sugars in the bananas, these Baked Blueberry Oatmeal Cups are a healthy way to start your day.

Ingredients

  • 1 cup mashed banana
  • 1 cup old-fashioned rolled oats uncooked
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries fresh or frozen

Instructions

  1. Preheat oven to 425 degrees Fahrenheit. Spray large muffin tin with non-stick spray.
  2. Mash banana until smooth.
  3. Add banana, oats, beaten egg, baking powder and vanilla to a bowl.
