Ingredients

  • For the muffins:
  • 1 1/4 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup white sugar
  • 2 cups chopped fresh (or canned) peaches
  • 1/2 cup whole milk
  • 1 egg
  • 1/4 cup vegetable oil
  • For the streusel topping:
  • 1/4 cup all purpose flour
  • 1/4 cup white sugar
  • 1 pinch cinnamon
  • 3 tablespoons cold unsalted butter

Instructions

  1. For the muffins:
  2. Preheat your oven to 350 degrees Fahrenheit and prepare a large muffin tin with 8 muffin cups.
  3. Add the flour, baking powder, salt and sugar to a large bowl and whisk together to combine. Add the peaches, reserving about 3/4 cup for topping the muffins, and stir to coat.
